Nonfiction Tuesday - It's All Easy

Gwyneth Paltrow’s latest cookbook It’s All Easy promises “delicious weekday recipes for the super-busy home cook.” In short, It’s All Easy is exactly the kind of meal mantra we can get behind. These Balsamic-Macerated Berries with Cashew Cream deliver; they are a delicious, plant-based treat that can be prepared (and consumed) in minutes.
Admittedly, we were hesitant about the inclusion of balsamic, but in a moment of clairvoyance, GP reassures readers: “Syrupy balsamic vinegar, usually associated with savoury dishes and salads, is actually the perfect complement to sweet summer berries.” And of course, she was not wrong. Drizzled over fresh strawberries with a sprinkle of coconut sugar and some lemon zest, and served over a fluffy pile of whipped cashew cream (two parts soaked cashews to one part water, whirred in a blender with maple syrup, vanilla, and a pinch of salt), balsamic is the perfect addition to the oh-so-easy dish.
